Lemon Butter Muffins

Lemon is such a universally loved flavor in so many dishes, which is why when added to this butter muffin recipe you get a delicious brunch recipe everyone is sure to enjoy.

We always like to get creative with our muffin making, but this recipe is a classic at home and always a requests when guests dine with us earlier in the day. Try it out at your next brunch!

Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1 stick butter
1 egg
1 cup milk
1 lemon, juiced
2 teaspoons lemon extract

Directions

Preheat your oven to 400 degrees.

Combine the flour, baking powder, baking soda and salt in a medium bowl and set aside.

Using an electric mixer, cream the butter and sugar together until smooth.

Mix in your egg, milk, 3 tablespoons of lemon juice and lemon extract.

Stir in the flour mixture.

Lightly spray a muffin pan and fill 2/3 full with batter.

Bake for approximately 18-20 minutes.
