Lemon Cupcake Jell-O Shot Recipe

Everyone loves cupcakes, and what better way to bring the cupcake to a new level than by re-creating it in a jello shot? Nearly every flavor works well for this recipe, but with spring around the corner, the zesty lemon flavor adds a little zing to any celebration. 

Ingredients:

2/3 cup of water

1 cup Whipped Cream Vodka

3 packets of lemon Jell-O 

2/3 cup of Limoncello Liqueur

Whipped cream

Sprinkles

Directions:

Before mixing the Jell-O, gently spray round silicone molds with cooking spray and then dab with a cloth to remove any excess residue. This will make the Jell-O shots easy to peal away as they are removed from the molding tray. 

In a large bowl, dissolve the gelatin with 2/3 cup of boiling water, stirring frequently to avoid clumping.

Once dissolved, add the chilled vodka and Limoncello, and then stir until fully blended.

Gently spoon your jello mix into the silicone molding tray, taking care that they are resting in a secure place to avoid spilling (I used a flat baking tray to move the mold and it worked like a charm). 

Allow the Jell-O to set for 2-3 hours, and then remove from the fridge to start assembling your cupcakes.

Delicately remove the molds from the tray, and arrange them on to a serving tray.  Before serving, garnish with whipped cream and sprinkles.
