Lemony Tabouli Salad

Tabouli salad is a traditional Lebanese salad made with Bulgar wheat and chopped fresh mint. The mint is omitted in this recipe giving it a fresh lemony taste that pairs perfectly with fish.

Ingredients

2 cups Bulgar wheat
2 cups cold water
1 cup chopped parsley
1 cup chopped green pepper
1 cup chopped green onions
1 cup chopped tomato
1 cup chopped cucumber
1/2 cup olive oil
1/2 cup freshly squeezed lemon juice
1 1/2 teaspoon Kosher salt

Directions

Combine the Bulgar wheat and water and set aside for 2 hours.

After 2 hours, combine the Bulgar wheat with the chopped parsley, green pepper, green onions, tomato and cucumber.

Mix the oil, lemon juice and salt and pour over the salad ingredients.

Chill for several hours before serving.
