Lime Cilantro Black Bean Hummus

Ingredients

  • 1 clove garlic
  • 1 (15 oz.) can black beans, drained, rinsed
  • 1 Tablespoon lime juice
  • 1/8 Teaspoon salt
  • 1/4 Cup olive oil
  • 1/2 Cup chopped fresh cilantro

Directions

  • Place garlic in a food processor and process until minced. Add beans, juice and salt, and process into a puree.
  • With processor running, slowly add olive oil in a steady stream through the feed tube. Process until mixture thickens, about 1 - 2 minute. Stir in cilantro.
  • Spoon into serving dish and serve as a spread for tortilla or banana chips. Store in an airtight container in the refrigerator. Bring to room temperature before serving.

    Makes about 1 cup
