Rice crisp treats have always been one of the easiest and quickest desserts to put together. All you need is marshmallows and rice crisp cereal and you’ve got yourself a delicious treat. But to make this dessert festive for St. Patrick’s Day, I’ve added Lime Jell-O Powder and a couple drops of green food coloring.
5 tablespoons Unsalted Butter
10 ounces (1 large bag) of Marshmallows
1/2 teaspoon Pure Vanilla Extract
6 cups Rice Crisp Cereal
3 ounces (1 box) of Lime Green Jell-O Powder
A few drops of Food Coloring
Butter the bottom of a 9x9 baking pan and set aside.
In a large saucepan, melt the butter over low heat. Add the marshmallows and salt and cook, stirring occasionally, until the marshmallows are completely melted and smooth. Stir in the vanilla. Remove the pan from the heat and add the jello powder and food coloring until the marshmallows are a medium green color.
Add the cereal to the marshmallows and stir until the cereal is completely coated with the melted marshmallows. Continue stirring until the cereal is coated and there are no melted marshmallows on the bottom of the pan. Pour the mixture into the prepared pan and using your hands (you can put butter on your hands to make it easier), press it down into the pan.
Let the treats cool in the pan on counter until completely cooled and hardened, about 30 minutes. Cut into squares, and either wrap in plastic wrap individually or serve. Enjoy!
These last up to 3 days wrapped in plastic wrap or in a sealed container.
