These lime marinated chicken skewers are always a hit at our dinner parties. I've served these to our guests as appetizers and hors d'ourves at summer-time parties and even Asian cuisine inspired dinner parties. Now, we are passing one of our best performing recipes on to you, so you and your guests can enjoy these too!
Ingredients
For Chicken
1 teaspoon siracha
3 limes, juiced
1/4 cup Dijon mustard
2 tablespoons olive oil
3 teaspoons salt
4 pounds boneless skinless chicken thighs, cut into 1 1/2 inch cubes
2 cups Carrot-Miso Dipping Sauce (Recipe follows)
6-inch bamboo skewers
For Sauce
1/2 cup rice vinegar
1 cup water
1/2 cup white miso
1/4 cup tahini paste
2 medium carrots peeled and chopped 2-inch ginger, peeled and chopped
2 garlic cloves, chopped
1/4 cupfresh lemon juice
1/4 teaspoon cayenne pepper freshly ground black pepper
3 tablespoons sesame oil
2 teaspoons honey
Directions
For Chicken
In a mixing bowl, combine the siracha, juice lime juice, mustard, oil and salt. Add the chicken and toss until coated in the marinade. Place a nonstick or cast-iron skillet over high heat and brown the chicken in batches. Remove to a plate and allow to rest for 5-10 minutes.
String the chicken onto skewers, and arrange around a bowl or ramekin of carrot-miso dipping sauce.
For Sauce
Combine all ingredients in a blender until smooth.
