Lite n Creamy Vanilla Pops

This recipe comes courtesy of chef and author Susan Irby. They hail from her new cookbook Substitute Yourself Skinny.

Ingredients

2 tablespoons granulated sugar
1/3 cup honey
1/4 cup cornstarch
1/4 teaspoon sea salt
3 cups non fat milk
3 egg yolks
2 teaspoons vanilla extract
3-ounce pop tray and wooden sticks

Directions

In a double-boiler over medium heat, whisk together the sugar, honey, cornstarch, and salt. Gradually whisk in the milk, mixing until all the ingredients are dissolved and combined. Whisk in the egg yolks. Whisk constantly, cooking until the first bubbles appear (this takes about 5 minutes or so). Continue to whisk for 1 minute.

Remove from heat and stir in the vanilla. Divide the mixture among the pop molds. Chill in the refrigerator until cool and thickened, about 1 hour. Insert the pop sticks, and freeze until solid about 4 hours. Pops will keep for up to 2 weeks in the freezer.

*To release easily, run the molds quickly under warm (not hot) water.

Tovolo and Orka make some great pop sets. These jewel pop molds are also good for use by all your Pop Warner players, AKA the kids.
