I can think of none other than the "golden chalice of soup," a lobster bisque with luxury toppings, for a top of the line Super Bowl Party.

Ingredients

  • 2 (@ 1 1/2 lb.) lobsters, cooked
  • 3 cups water
  • 8 oz. bottle clam juice
  • 1 bay leaf
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 6 tablespoons flour
  • 4 cups milk
  • 1/4 cup tomato paste
  • 1 teaspoon salt
  • 1/4 cup dry sherry

Directions

  • Remove the meat from the lobster, chop into bits, and set aside. Place lobster shells in a large pot with water, clam juice, and bay leaf. Cook over medium-low heat for 30 minutes. Strain and reserve liquid stock.
  • Melt butter in a large pot. Add onion and saute for about 2 minutes. Sprinkle flour over onion and cook, stirring frequently, for 1 minute.
  • Add the liquid stock, milk, tomato paste, salt, and pepper. Cook, stirring constantly, on medium for 10 minutes to thicken. Add lobster meat. Remove from heat, add sherry, and stir. Transfer to a crock-pot on low heat for the party. Place bowls of toppings next to crock-pot for guests to add to their soup.

    Makes about 8 servings
