Sweet, bitter and full of aroma, this vegetable marinade is bursting with the tastes of the Mediterranean making it a great accent to any summer grilled vegetables.
While great on vegetables, this marinade recipe also works well with chicken, fish or even as a summer salad dressing.
1 cup of Olive Oil
1/2 cup of Balsamic Vinegar
1 Garlic Clove
3 Sprigs of Thyme
3 Basil Leaves
Salt and Pepper
In a mixing bowl, grate the garlic into a fine paste and then add the olive oil, balsamic vinegar and salt and pepper to taste. Mix well before adding the fresh herbs into the mix.
Allow the marinade to sit at room temperate for 30 minutes to ensure that the aromas of the herbs are absorbed into the marinade. Either use the mix immediately, or store in your refrigerator in an airtight container for up to 4 days before using.
