Mint Ice Cream Bonbons

In our books, ice cream is always in season and this decadent bite sized dessert featuring the cold creamy treat is sure to please even in the dead of winter.

Semi-homemade bonbons are easier to whip up than you may think. With a vanilla wafer, scoop of ice cream and chocolate drizzle you, too, can make a dessert that's sophisticated, sweet and surprisingly fresh for party guests.

Ingredients

2 1/2 cups Gourmet Mint Ice Cream--or your favorite flavor
24 vanilla wafers
2 cups semi-sweet chocolate chips
6 tablespoons butter
3-4 tablespoons half and half

Directions

Place a small scoop of ice cream on each vanilla wafer, press down slightly and then place in the freezer for at least an hour.

Melt the chocolate chips and butter in the top of a double boiler. Stir until smooth. Add the half and half to get the consistency you want.

Remove ice cream topped wafers from the freezer and place on a wire rack. Spoon about 1 tablespoon of the warm chocolate over each ice cream cookie and let it drip down the sides. Freeze until ready to serve.
