No-Bake Cookie Butter Cookies

What is it about chocolate cookies plus no baking required that just screams perfection? These no-bake goodies are paired with the deliciously popular cookie butter, providing them with a slightly different and unique flavor from your average cookie.

If you can’t find cookie butter, feel free to substitute your favorite peanut butter or chocolate hazelnut spread. Whatever you choose, they’re sure to be a hit.

Ingredients:

1/4 cup butter

1/4 cup milk

3/4 cup sugar

1/2 cup cocoa powder

1/2 teaspoon vanilla

1/4 cup cookie butter (Trader Joe's Speculoos Cookie Butter or Biscoff spread)

1-1/2 cups rolled oats

Directions:

In a saucepan over medium-high heat, combine butter, milk, sugar, and cocoa. Bring to a boil, stirring constantly. Reduce heat and continue to boil for 2-3 minutes.

Remove from heat; add vanilla and stir in cookie butter.

Add oats and mix well.

Drop quickly onto waxed paper and allow cookies to cool and set.

10-15 minutes

Makes:

15-20 cookies
