A no bake dessert, these mini pots of ginger joy offer simple and festive holiday cheer to anyone scooping them onto a spoon.
Ginger cookies seldom reside in our pantry for very long, especially around the holiday season. These tiny trifles allow us to use the broken cookies that so often find themselves at the bottom of the cookie jar and make a great cooking activity for the young holidaymakers in your home.
20 ginger cookies
2 cups of whipped topping
2 cups of chocolate chips
optional vanilla frosting for the topping
Break the 6 ginger cookies and the chocolate chips into fragment pieces and than add to a mixing bowl with the whipped topping. Stir together until fully blended and then set aside.
Place a ginger cookie at the base of each trifle dish and then a full tablespoon of the whipped mixture on top of the cookie.
Top with a ginger cookie and an optional dollop of vanilla frosting, and then sprinkle with cookie crumbs. If you are making them in advance of the party, store your trifle in the fridge to ensure that they stay chilled and intact.
