Cake pops are cute, colorful and trendy items to add to a dessert table these days. From colorful balls to character imitations, they are just another way to tie a party’s color or theme into your design!

For my Kentucky Derby themed fundraiser for the Boys & Girls Club, I knew I wanted a simple, yet bold pop of YELLOW to go along with the color scheme, so I made “no-fuss Oreo truffle pops” using yellow candy melts, white lollipop sticks and a thin strip of yellow seersucker fabric to get the job done.

These are ultra simple to make and are even more delicious to eat! Your guests will love them!

Ingredients:

2 8-ounce packages cream cheese, softened at room temperature

2 packages Oreos (approx 72 cookies), finely crushed

1 package of 50 Lollipop Sticks

2 packages YELLOW Wilton’s Candy Melts

*I made these in two rounds, using 1/2 of the recipe each round

Directions:

Finely crush Oreos in a food processor until cookie clumps are removed and they’re dirt-like in texture. Transfer crushed cookies to a mixing bowl. Add cream cheese to bowl and mix until well blended.

Roll into balls and place on cookie sheet or flat pan. Take 3 or 4 candy melts out of one of the packages and melt them (on 50% heat) in the microwave in a microwave-safe bowl.

Dip one end of each lollipop stick into the chocolate and then insert the dipped end of the lollipop stick down into the center of each truffle ball on your cookie sheet. (This helps your truffle ball stay on the lollipop stick when eating without falling off.)

Refrigerate for 30 minutes.

After refrigerating, melt candy melts according to package instructions in a microwave-safe bowl.

With a spoon, drizzle melted yellow candy over each truffle until completely covered – DO NOT DIP INTO THE BOWL.

Set on wax paper until melted candy hardens. Once all candy-coated truffles have set, cut a thin strip of seersucker fabric (or ribbon/paper) and tie around the stick for added color/theme integration.
