No-Bake Snowball Cookies

Snowball fights are a favorite winter activity, and these delightful coconut confectioneries encapsulate all the sweetness and innocence of the playful pastime without the fear of frostbite!

These no-bake snowball cookies are so easy to make kids can whip up a batch all on their own. Simply mix, shape, roll, and voila! No mittens necessary. Serve with homemade white hot chocolate for an extra special snow day treat.

Ingredients:

1 package vanilla cream sandwich cookies

8 ounces cream cheese, softened

2 cups shredded coconut, chopped

1-teaspoon coconut extract

Directions:

In a food processor pulse cookies until coarse crumbs form, then mix in cream cheese and coconut extract, and continue to process until smooth and creamy.

Divide your dough into 3-inch rounds using your hands or a small ice cream scoop. Pour the coconut into a shallow bowl, and roll dough balls until completely coated.

Serve immediately or chill for an hour or so, for a firmer, cheesecake-like cookie.
