Everyone loves a cucumber sandwich, and these solo versions of the classic favorite have been given a modern twist with fresh herbs from the garden. Rich cream cheese, crisp cucumber, nutty brown bread and a selection of fresh herbs makes this a healthy and simple party snack that will keep everyone reaching for more.

Ingredients:
A loaf of Brown Bread
2 cups of Cream Cheese
1 large Cucumber
Handful of Chives
Handful of Mint
Directions:
Thinly slice your cucumber and set aside while you use a circular cookie cutter to cut the bread into mini discs. Then, spread a thin topping of cream cheese across the top of each one before adding a cucumber disc to the top of each bread disc. Garnish with chives or mint before serving.
Rather than discarding the excess bread, store it in a freezer bag and save for making croutons for summer salads later in the season!
