I'm always looking for easy and colorful recipes to bring to summer cookouts and barbecues that everyone will love. Sure, you could make the usually pasta or potato salad, but why not whip up something that's a bit lighter, but still packed with tons of flavor.
This orzo summer salad is a refreshing recipe full of dill and lemon for a little zest and a handful of feta cheese for a bit of saltiness. This dish can easily be transported to a summer party and it will bring tons of color to any menu.
When making this dish, please keep in mind that you will be grilling your veggies. Slice them all into discs so they can easily be flipped and tossed on the grill!
1 1/2 cups of orzo pasta
1 zucchini, washed and sliced
1 yellow squash, washed and sliced
1/2 red onion
1/2 cup crumbled feta cheese
3 tablespoons of olive oil
1/2 a lemon, squeezed for the juice
2 tablespoons of dill
salt to taste
Using your grill or stove top griddle, grill your vegetables on medium heat.
Once they have cooked thoroughly and have those yummy grill marks, set them aside to cool.
While your veggies are cooling, make your orzo pasta according to the directions on the box/bag.
Next, start making your dress. In a large bowl, combine your olive oil, lemon juice and dill.
Next toss in your cooked orzo and cooled vegetables. You can cut the veggies into smaller sizes if you think they are too large for a forkful.
Add salt to the bowl to taste along with your feta cheese and mix up! You're dish is ready for a party!
