Pea Lime Cupcakes

Peas, yes peas, are part of these truly yummy cupcakes. I had my doubts that peas could be masked enough to not make my kids make funny faces at me when they bit into these, but there is absolutely no pea flavor to these cupcakes. The hint of lime really takes care of that and makes these a really refreshing little dessert—a dessert full of hidden vegetables.

A frosting with a hint of lime is perfect to top these off!

Ingredients:

3/4 cup frozen peas steamed

1/4 cup canola oil

1 1/4 cup flour 

1 cup sugar

2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt (optional)

1/3 cup sour cream

1 teaspoon grated line rind

2 tablespoon fresh lime juice

1 teaspoon vanilla

2 large eggs

1/2 cup plain yogurt

Directions:

Puree steamed peas with the canola oil in a food processor.

Combine dry ingredients. In a separate bowl, whisk together all wet ingredients and pea puree. Add dry ingredients to wet ingredients, mixing until just combined. Bake in muffin cups at 375 degrees F for 25 minutes, or until done.

Serves:

Makes 1 dozen regular size muffins, or 2 dozen mini muffins.
