I also like to serve one mouth-watering cookie option, and my Peanut Butter cookies are not only delicious but easy to make too!
Ingredients
2 cups or 1 - 16 ounce jar peanut butter (the sweeter traditional brands work best for this recipe)
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon alcohol free vanilla extract
2 teaspoon baking soda
1 pinch salt
Directions
Using an upright mixer with the paddle attachment, cream the peanut butter and the sugar ‘til fully incorporated.
Add in the eggs one at a time, and then all the remaining ingredients.
Roll the dough into balls that are approx 1 1/4 inches in diameter. Using the back of a fork press down on the balls and then create the crosshatch pattern going the other direction.
Bake for 8-10 minutes on a greased cookie sheet in a preheated oven set to 350 degrees.
Remove from oven and let cool, and then transfer to a cooling cookie rack.
Tip: You can make this dough the night before. Store in the fridge in an airtight zip-sealed bag.
