Pico de Gallo is typically a hot relish that offers all the taste of traditional salsa but with a bir more bite. It can be thought of as an uncooked condiment with chopped tomatoes, onions and chilies at its base, but it's also given lots of added flavor with a few more traditional ingredients thrown into the mix. Everything from lime to mango can be incorporated!
Similar to salsa, pico de gallo is a favorite topping of ours when enjoying some chicken tacos, but we've also been known to top fresh grilled fish with it, too! Luckily, this simple recipe is perfect for those two dishes - and much more!
Ingredients:
2 beefsteak tomatoes
2 white onions
Handful of cilantro
1 fresh lime
A pinch of salt
2 green chilies
Directions:
Dice tomatoes, green chilies and onion into small pieces, then add a pinch of salt to the mix. Finely dice cilantro and fold into the existing mix. Squeeze lime juice over the top to fit your taste.
Can be made a day in advance or served immediately.
