Come mid-July, if I haven’t yet melted into a person puddle, it is all thanks to this refreshing fruit cocktail.

Muddled mint, fresh fruit, and of course Pimm’s liqueur are the secret to beating the heat without investing in central air conditioning. Like a summer sangria, the fruit that goes into your cup is completely of your picking, but I find that nothing quite compares to the sweetness of strawberries paired with the cool sophistication of cucumbers.

A seasonal drink indeed, Pimm’s Cup looks, tastes and smells like summer which is why it is the first thing I reach for when the temperatures start climbing. You should, too!

Ingredients

1/4 cup cucumber, thinly sliced
1/4 cup strawberries, hulled and sliced
1/4 cup freshly squeezed lime juice
3-4 slices of lime
6 ounces club soda
1 teaspoon honey
3 ounces Pimm’s
4-6 sprigs fresh mint, plus more for garnish

Directions

In the bottom of a cocktail shaker muddle half off the cucumbers and the mint leaves; add in the lime juice, honey and Pimm’s.

Fill the shaker with ice and shake vigorously for about 20 seconds. Strain your cocktail into a pint glass or mason jar if you're feelign trendy.

Filling the vessel about 3/4 of the way full and garnish with lime, strawberry and cucumber slices, and remaining mint leaves.
