Pineapple and Jell-O have never played nicely together, until now. Pineapple Jell-O and coconut rum make this the ideal playful cocktail for entertaining at home, and the cherry on top brings this classic cocktail to life, making it the perfect cocktail recipe for any celebration.
Ingredients:
6 ounce box of Pineapple Jell-O
1 cup of coconut rum
1 cup of water
Handful of grated coconut
Whipped Cream
6 cherries, pitted
Directions:
Follow the directions on the Jell-O Packet, replacing the second cup of water with chilled coconut rum.
Before setting the Jell-O, add a handful of grated coconut to the mixture, blend and then pour into shot glasses to set, taking care to fill the glasses 3/4 of the way full. Place in the fridge to set - at least 4 hours.
Once set, gently stir the mixture, top with a drizzle of Coconut rum to lighten it up and garnish with a cheery and whipped cream.
If you are looking for lighter shots, add extra water or rum to the mixture before setting, but not more than 1/4 cup as you will end up with a runny shot otherwise.
