Pink Lemonade Cupcakes

A pastel hued cupcake is a delightful dessert recipe for any celebration. We've added some powdered lemonade mix to our cake box batter for a tart flavored cupcake, and topped it with a sweet sugar sprinkled buttercream icing.

Ingredients:

1 box white cake mix (prepare this as directed)

1 cup Country Time pink lemonade drink mix

Buttercream frosting

Pink sugar garnish

Directions:

Preheat oven and pour white cake mix into a large glass mixing bowl.

Use a whisk and move through dry cake mix to remove any large clumps.

Prepare cake mix as directed by box, but combine ingredients with whisk by hand (this will give the cake a fluffier composition and prevent over-mixing).

Add the pink lemonade to the mix and combine. Taste and add more according to your liking!

Use an ice cream scooper to divide batter into a lined cupcake pan.

Bake for 8 minutes, rotate pans and bake for another 8 minutes. If you're not sure whether or not the cupcakes are done, stick a toothpick into one. If it comes out clean, they're cooked!

Remove from oven and allow to cool completely on wire racks.

Ice with buttercream icing and sprinkle light pink sugar on top.
