Pizcookies - Cookie and Ice Cream Dessert

The pizookie is a combination of the words pizza and cookie. Many restaurants have their own versions of this warm, yummy ice cream dessert. Here's one you can make at home. 

Make them in individual ramekins so everyone has their very own, because it's way too hard to share this!

Ingredients

For Cookie:

1/2 cup softened butter
6 tablespoons  granulated sugar
6 tablespoons packed brown sugar
1/2 teaspoon vanilla
1 egg
1 cup plus 2 Tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate morsels

For Topping:

1/2 Gallon Vanilla Bean Ice Cream
Whipped Cream
Chocolate Sundae Sauce
Toasted, chopped almonds  (optional)

Directions

Preheat oven to 350° F.

Spray each ramekin with cooking spray.

Beat the butter, granulated sugar, brown sugar and vanilla until creamy. Add the egg and beat well. Gradually beat in the flour, baking soda and salt.

Stir in the chocolate morsels.

Scoop about 2 tablespoons of the dough into each ramekin and press smoothly into the bottom.

Bake for 12 to 15 minutes or until light  brown but still soft in the center.

Remove from the oven and set ramekins on a wire rack for about 10 minutes to cool slightly.

Top the warm cookie with a scoop of vanilla bean ice cream, chocolate sauce, a dollop of whipped cream and a berry.  Add toasted, chopped nuts if desired.
