Pizza Party Cupcakes

At our Pizza Party we served our guests pizza inspired cupcakes for dessert.

Topped with dried coconut as the cheese, cherries as the tomato, and dried pineapple as the topping, these sweet mini pizza themed cupcakes were a big hit so make sure you make plenty of extra's!  

I tied in the look of my pizza party invitations with fun pizza cupcake toppers from  to give my table an added pizza parlor feel.  

Ingredients

4 cups of cream cheese frosting
12 vanilla cupcakes
24 cherries
3 large dried pineapple rings
1 cup of shredded coconut

Directions

Finley dice your cherries and thinly slice your dried pineapple. Once your cupcakes have cooled, lightly frost with cream cheese frosting, the idea is to create a pizza base with your frosting, so a thin layer spread across the top will give you a nice flat pizza base.  

Once frosted, add the cherries and sliced pineapple to the top of your cupcake. Sprinkle with shredded coconut to complete the pizza effect.
