Ingredients
8-10 small white potatoes (the smaller the better), thinly sliced crosswise
2 tablespoons olive oil
2 teaspoons paprika
1 teaspoon coarse sea salt
Directions
Preheat oven to 375°F. In a medium bowl toss sliced potatoes with olive oil, paprika, and salt. Spread seasoned potatoes on a non-stick baking sheet and roast for 15 to 20 minutes or until golden and crispy. Remove from oven and allow to cool. Serve with ketchup or creamy ranch dip.
