President's Day Penny Potato Party Snack

Celebrate Mr. Lincoln’s birthday, and the currency that sports his mug, with these crispy golden potato coins, perfect for dipping—they make for a super simple party snack and a healthier alternative to greasy potato chips.

Zesty paprika gives these pretty pennies their coppery shine, while adding a subtle kick to oven-roasted potatoes. Don’t pinch pennies when making a batch of these tasty taters—they won’t last!

Ingredients

8-10 small white potatoes (the smaller the better), thinly sliced crosswise
2 tablespoons olive oil
2 teaspoons paprika
1 teaspoon coarse sea salt

Directions

Preheat oven to 375°F. In a medium bowl toss sliced potatoes with olive oil, paprika, and salt. Spread seasoned potatoes on a non-stick baking sheet and roast for 15 to 20 minutes or until golden and crispy. Remove from oven and allow to cool. Serve with ketchup or creamy ranch dip.
