Once the temperatures start to drop, there’s nothing quite as comforting as a warm, creamy bowl of pumpkin spice oatmeal on a crisp fall morning. The addition of canned pumpkin in this recipe brings in one of the most popular fall flavors of pumpkin, which is not only delicious, but a great way to add in some extra veggies, too!
Ingredients:
1/2 cup milk
1/2 cup water
Pinch of salt
1/2 cup dry oats
1/3 cup canned pumpkin
1/2 teaspoon vanilla extract
2 tablespoons raisins
1/2 teaspoon each, cinnamon and pumpkin pie spice
Directions:
In a small saucepot, bring milk water, and salt to a boil.
Add in dry oats, pumpkin, vanilla extract, raisins, and spices.
Reduce heat to low; cover and allow to simmer, 3-5 minutes or until desired consistency is achieved.
Chef's Tip: Alternately, you can make your oatmeal in the microwave by combining all of the ingredients into a microwave-safe bowl; cook for 1 minute, stir, and cook for an additional 1-2 minutes. Allow cooked oatmeal to sit for 1 minute before removing.
