Colorful fruit blended with ice cream and layered with Jell-O coated angel food cake makes for a unique birthday cake that looks bright and beautiful on display, but will also please a 1st birthday party guest list. Whether it's the birthday boy or girl, excited parents or thrilled grandparents, this cake recipe will be enjoyed by one and all. And as if that weren't good enough, it's also simple to make.

Ingredients:
1 - 10 inch angel food cake
3 ounce package of strawberry jello
3 ounce package of orange jello
3 ounce package of lime jello
10 ounce package frozen quick-thaw strawberries
10 ounce package frozen blueberrie
1 cup mandarin orange sections
2 quarts of vanilla ice cream
Directions:
Divide angel food cake into thirds. Cut each third into small cubes. Place the cake cubes in 3 plastic bags. Add the strawberry jello to one bag, lime to another, and orange to the third. Shake to coat cake pieces with jello.
Partially thaw frozen fruits and drain mandarin oranges. Soften the ice cream and divide into thirds.
In a 10-inch angel food pan with removable bottom, pack the strawberry cake cubes, pour partially thawed strawberries over them and spread 1/3 of the ice cream over that. Follow with the lime cake cubes and partially thawed blueberries and 1/3 of ice cream. Arrange orange cake cubes over this and cover with mandarin orange sections and the remainder of the ice cream. Freeze until ready to serve.
Run a knife around the outside edge of the pan to loosen the cake. Press the bottom of the tube pan and lift out. Slice and serve.
