A toast to the USA! Raspberry Bellinis are bubbly, refreshing, and can be made with either brut champagne or sparkling white grape juice.
1 10-ounce bag of frozen raspberries, thawed
2 tablespoons sugar
1 bottle of brut champagne or sparkling white grape juice, chilled
Puree the raspberries and sugar in a blender until smooth.
Strain the raspberry puree through a sieve and discard the seeds.
Spoon about one tablespoon of raspberry puree into each glass.
Pour the champagne or sparkling grape juice into each glass and stir very gently.
Garnish with a fresh raspberry.
Tip: Dress it up! A couple of ribbons tied on the stem of the glasses continues to tie the party theme together and adds a festive touch to the table.
