Royal Icing Flower Cupcake

Flowers are always the go-to gift for moms on Mother’s Day, but why not take a less expected approach to your bouquet of blooms? Rather than giving mom a big flower arrangement, surprise her with a bouquet of delicious flower cupcakes piped from royal icing! This design takes a little more time and skill than your average cupcake dessert, but it’s certainly well worth the extra effort. Mom will be delighted with the design and so grateful to receive such a special treat.

Ingredients

a batch of cupcakes (make mom’s favorite flavor)
royal icing
colorful confetti sprinkles
pastry bag
thin tip and coupler (we used Wilton 4)

Directions

Bake a batch of your mom’s favorite cupcakes and let cool. While the cupcakes are cooling off, mix up some royal icing.

To Make Royal Icing: Beat 2 egg whites until thick and smooth. Add
4 cups of powdered sugar, 1/4c at a time, until it reaches a thick but spreadable consistency. Divide your icing into thirds.

Once the cupcakes have cooled, use a plastic piping bag with a small round tip to pipe a simple white flower outline onto each cupcake using a third of your icing. Place a small yellow or orange candy in the middle of each flower. Allow to set.

Tint a remaining third of the icing green and the last third pink (or another light flower color) with food coloring.

Thin each with a teaspoon or two of water until it spreads when dripped off the back of a spoon.

Use another piping bag to fill in the outside of each flower with green icing and a third to fill each petal with pink.
Allow the icing to dry and set.

You can serve your flower cupcakes in a small basket or arrange them like flowers on a tray for a presentation that’s just as special as your cupcakes are!
