I made these salmon stuffed potato appetizers for my St. Patrick's Day celebration, but they really are such an easy and elegant bite to serve at any party. The freshness of the salmon lends itself to summer parties, while the more savory potato bottoms make this app just as friendly for a winter dinner.
Both featured ingredients are traditional Irish ones that, when combined, create the perfect bite - one that's salty, sweet, fresh and warm. They're very easy to make, they look pretty, and you don't need two hands to enjoy them, which means you can hold onto your cocktail as you enjoy them!

small red potatoes
thinly sliced smoked salmon
rosemary for garnish
Coat the small red potatoes with olive oil and sea salt, then roast in a preheated oven at 400 degrees until for tender. Remove from oven and let cool slightly.
When cool enough to handle, cut a small cross in the top of each potato and press the sides sides to create an opening at the top. Put a dollop of sour cream in each potato and then top with a slice of smoked salmon.
Finish it off by garnishing each potato with a fresh herb like rosemary or chives - just a sprinkle is enough!
