I love Pumpkin - whether in muffins, pies or cakes, nothing says Fall more than this rolly-polly orange fruit!
But why not have this lovely fruit play a role in the main course too? Enter my savory pumpkin butter!
This is not a sweet butter rather a nice mellow savory butter perfect for dinner rolls or melting into a creamy scoop of mashed potatoes.
Ingredients
4 tablespoons canned Pumpkin
4 tablespoons butter (I use salted butter for this)
2 treaspoons dried thyme
1 pinch extra salt
Directions
In a small bowl, mix together all your ingredients. You will have a beautiful orange colored whipped butter. I like to serve mine in a small ramekin.
