Simple and Easy Chicken and Asparagus Entree

This is my standby recipe for dinner during the week or dinner parties.

An easy simple dinner recipe, this entree looks like you spent all day slaving over the oven when in reality you have only spent 20 minutes.  

Full of flavor and color, this entree is great served any time of year that offers fresh asparagus.  

Ingredients:

12 asparagus tips

2 chicken breasts

2 slices of parma ham or prosciutto

Directions:

Pre-heat the oven to 385 degrees Fahrenheit and dress the chicken breast by blanketing them in proscuitto slices, and a healthy dose of salt and pepper.  

Place in the oven and bake for 25 mintues or until fully cooked.

About 10 minutes before the chicken is ready, place your prepared asparagus tips in a frying pan and gently simmer them until they are fully cooked (I always add butter and lemon juice for added flavor, but if you do not have them to hand, the dish will not suffer for it).

Once the chicken and the asparagus are cooked, dish them onto a place and serve immediately.  

Serves:

2 - 4 (depending on chicken size)
