And with only 3 ingredients to make this salad sing, it can be prepared with little or no fuss at your next dinner party.
If you want to use more than 3 ingredients you can add a few grilled peppers or tomatoes to give it something extra, but don't worry, it is just as great with just the 3 ingredients listed below!
Ingredients
6 links of chorizo (I used fresh grilled chorizo, but cured chorizo works just as well)
Baby spring leaves
Parmigiano-Reggiano cheese
Directions
Wash and prepare the baby spring leaves and leave to dry while you prepare the chorizo.
If you are cooking the chorizo, follow the instructions on the packet and fully drain off all the oil before placing on the bed of fresh spring greens.
Once in place, shave Paraigiano Reggiano cheese over the top and mix together.
If you are looking for a little salad dressing, drizzle the cooking oil over the top of the salad, but only lightly -- you are looking to infuse flavor, not drench the salad in oil.
