Chicken Enchilada Soup
Simply shred your baked chicken and add it to chicken broth, enchilada sauce, diced tomatoes, black beans, corn, diced carrots, cumin and brown rice for a warm and spicy, yet filling dinner your family will enjoy.
Baked Mexican Pizza
This dish is easy! Layer a tortilla in a cake pan with beans, cheese, corn, chili powder and of course your store-bought chicken, then repeat and bake. I pulsed the chicken in the blender to make it look like chopped meat more than pulled chicken.
Buy some pre-made slaw mix and mix in your chicken along with mandarin oranges, wonton strips, bell peppers, slivered almonds and sesame seeds with sesame dressing.
Mini Chicken Tacos
Fry up a couple of mini tortillas on a skillet and stuff them with the store-bought chicken, some green sauce, jack cheese for an extra kick and top with red cabbage.
Homemade Mac n' Cheese

This might be the easiest of all the recipes. In a bowl, add your store-bought baked chicken, celery, almonds, onions, lemon pepper, mayo and fresh dill. Zip it through a food processor and serve on your favorite bread.
