This punch uses Italian sparkling soda for a sweet yet refreshing flavor.
12 ounces frozen orange juice concentrate, thawed
12 ounces frozen lemonade concentrate, thawed
48 ounces pineapple juice
3 cups water
1 cup sugar
2 cartons of strawberries, sliced
1 liter lemon-lime sparkling soda (we used San Pellegrino)
Combine the orange juice, lemonade, and pineapple juice and stir well.
Create a simple syrup by bringing the water and sugar to a boil in a heavy saucepan. Boil until the sugar is completely dissolved, about 5 minutes or so. Allow the mixture to cool.
Once it is cooled, add the syrup mixture to the fruit juices you combined earlier.
Place the sliced strawberries into a plastic ring mold. Then, pour in enough fruit juice to fill the mold. Freeze the mold and allow to set. Refrigerate the remaining juices.
When ready to serve, pour the fruit juice into a punch bowl and add the soda. Float the strawberry ice ring in the punch.
