Many vegetarians love using eggplant as a meat substitute, and it's not hard to guess why! Aside from being delicious, it's health benefits are endless.
Ingredients:
4 small to medium size eggplants, halved lengthwise
2-3 tablespoons red pepper flake and garlic-infused olive oil
salt and pepper, to taste
Directions:
Place 1 cup of olive oil in a small pan over low heat, add 2 cloves of diced garlic and a tablespoon of red chili pepper flakes.
Allow to heat and simmer for about ten minutes. Let cool.
Brush 2-3 tablespoons of the garlic and chili pepper flake olive oil infusion over the eggplant halves, then place directly onto the BBQ grill over a medium heat.
Let each side grill for about 3-4 minutes before turning. Allow to cool and enjoy.
