It’s not easy to make nachos special. It’s just chips, cheese, and some added toppings. But for a special movie night, you are expected to bring things up a notch.
To make these nachos more unique, I made a homemade spicy nacho cheese sauce. The sauce is made of a mild Muenster Cheese, jalapenos, and chili powder. Top the nachos with some more pickled jalapenos, and these nachos will have your guests wanting more.

Ingredients:
1 recipe Spicy Nacho Cheese Sauce, Recipe below
8 cups Tortilla Chips, Lightly Salted
1/4 cups Sliced Pickled Jalapenos
Spicy Nacho Cheese Sauce:
3 tablespoons Unsalted Butter
1/4 cup All Purpose Flour
1 cup Milk
3 cups Muenster Cheese, Shredded
3 tablespoons Pickled Jalapenos, Finely Diced
Pinch Salt
Pinch Pepper
1 teaspoon Chili Powder
Makes:
3 cups Cheese
Directions:
Melt the butter in a medium saucepan over medium heat. Add the flour and whisk until the flour has soaked up all the butter and has slightly browned.
Add the milk and allow the milk to slightly thicken. Be sure to whisk the milk ever-so-often so it doesn’t burn on the bottom. Remove the pan from the stove and whisk in the cheese and jalapenos.
Continue stirring until the cheese has melted completely. Add the salt, pepper, and chili powder, adding more or less depending on your taste level.
Use immediately to top your nachos.
