Spicy Potato Salad Recipe

Potato salad is a dish that sticks to your sides and will keep your guests going. Add it to your next tailgate party menu and rest assured that your football fans will be well fed. 

Apart from satisfying a hungry crowd, potato salad is always a favorite to serve at outdoor parties because it's so easy to prepare ahead of time and tastes even better the longer it sits.

I gave this traditional favorite a spicy twist by adding diced red Chilies, but you can always omit them if you are looking for a milder side dish

Ingredients:

2 Pounds of Red Potatoes

1 Large red onion

1 Bundle of Cilantro

2 Diced Red Chili

1 Cup of Mayonnaise

3 Tablespoons of Olive Oil

Salt & Pepper

Directions:

Boil the potatoes until tender, drain and let rest until room temperature. 

While they rest, finely dice up the 2 red chili and large red onion.

Then, add to the chopped chili and onion mix a bundle of coarsely chopped cilantro leaves. 

Incorporate the chili, onions and cilantro with olive oil until fully blended. 

Next. add your chopped potatoes, mayonnaise and toss until blended well. 

Finish by adding salt and pepper to taste. 

Chill in the refrigerator before serving.
