We're loving this strawberry almond topped French toast for a late-morning gathering with the girls just before pool time. Take advantage of fresh summer strawberries that are readily available practically everywhere and make this recipe soon!

Ingredients:

3 slices light, whole wheat bread (look for ones around 45 calories/slice)

1/4 cup egg substitute

1/4 cup skim milk

1/2 teaspoon almond extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

4-6 strawberries, chopped or sliced

1 tablespoon slivered almonds

3 tablespoons sugar-free maple syrup

Directions:

In a small, shallow bowl, combine egg substitute, skim milk, extracts, cinnamon, and nutmeg. Whisk until combined.

Heat a medium skillet over medium-high heat and spray with nonstick cooking spray.

Using a fork, dip bread slices into egg mixture, one slice at a time, and carefully place on heated skillet. Cook about 3-4 minutes, flip, and cook an additional 1-2 minutes on the opposite side.

Top cooked French toast slices with sliced strawberries, slivered almonds, and sugar-free syrup.
