Two slices whole wheat bread
4 ounces goat cheese
1/2 cup of strawberries, hulled and sliced
4-6 large basil leaves
1/2 tablespoon butter
On one side of two slices of bread, spread your goat cheese in an even layer. Layer the bread with strawberry slices and basil leaves and carefully top one slice of bread with the other. You should create a double layer of strawberries and basil on one slice to make folding together easier.
Lightly grease a skillet with butter and place over medium heat. Pan fry your sandwich for 2 or 3 minutes on each side or until golden brown.
