Strawberry Grilled Cheese Sandwich

Strawberry and sandwich are two words you don’t often hear together, yet something about this grilled goat cheese and strawberry sandwich just seems right.

Creamy, sweet, tangy and earthy, this rustic sandwich recipe serves up all of our summer culinary hopes and desires between two slices of bread.

A seasonal take on a classic comfort food, this grilled cheese sandwich is as satisfying as it is refreshing. The combination of basil and fresh strawberries is unique and complimentary, and a welcomed alternative to standard cheddar and tomato toasties.

Ingredients:

Two slices whole wheat bread

4 ounces goat cheese

1/2 cup of strawberries, hulled and sliced

4-6 large basil leaves

1/2 tablespoon butter

Directions:

On one side of two slices of bread, spread your goat cheese in an even layer. Layer the bread with strawberry slices and basil leaves and carefully top one slice of bread with the other. You should create a double layer of strawberries and basil on one slice to make folding together easier.

Lightly grease a skillet with butter and place over medium heat. Pan fry your sandwich for 2 or 3 minutes on each side or until golden brown.
