While there is no replacing a big, juicy tomato, sweet turned savory strawberries make an interesting (and delicious) alternative to the former and more traditional red fruit in this summery spin on classic guacamole.
Rich, buttery avocados paired with fresh ripened strawberries make for an irresistible summer dip or spread that makes use of the season’s bounty. Simply scoop worthy, this rockin’ guac is great on tiny toasts, tortilla chips or even sandwiches.

Ingredients:
1 ripe avocado, pit and skin removed
1 cup strawberries hulled and diced
1 tablespoon fresh squeezed lime juice
Salt and pepper to taste
Directions:
In a small bowl mash the avocado and half of the strawberries together with a fork until smooth.
Next, toss in the remaining strawberries and roughly combine with your fork - you can make yours as textured as you want, though we prefer our guacamole to be a bit chunky.
Finally, mix in the lime juice and stir entire mixture until well incorporated; season with salt and pepper.
Serve immediately.
