A delightful, all-natural alternative to artificial sodas and soft drinks, this strawberry-rhubarb syrup drink recipe offers the classic combination of the two fruits with a touch of effervescence for a bubbly drink with a charming pink hue.
If one could bottle springtime and capture its innocence in a few sips, it may look and taste just like this lightly sweetened soda.
This old fashioned brew makes one think of back porches and roadside stands, and other images of simpler times, making it the perfect drink to ring in the springtime.

Ingredients:
1 1/2 cups rhubarb, ends trimmed and roughly chopped
1 pint strawberries, stems removed and halved
1 cup granulated sugar
1 1/2 cups water
Seltzer
Mint sprigs, for garnish
Directions:
In a medium saucepan combine rhubarb, strawberries, sugar and water. Bring ingredients to a boil and reduce heat to a simmer. Cook for about 10 to 15 minutes or until fruit is mushy and syrup is a bright pink color.
Remove pan from heat and allow to cool before straining mixture into a jar or bottle. To make the soda pour one part syrup and three parts seltzer into a tall glass office. Stir vigorously with a spoon or stirrer and garnish with a sprig of fresh mint.
