For a light salad that still satisfies and offers a fun flavor combination most guests won't expect, serve up this strawberry salad. It's a great option for luncheons, bridal or baby showers, or even for a picnic.
Ingredients
2 tablespoons sesame seeds
1/4 cup honey
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon finely cut shallots
10 ounces fresh spinach - rinsed, dried and chopped into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
toasted sliced almonds (optional)
Directions
In a medium bowl, whisk together the sesame seeds, honey, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
In a large bowl, combine the chopped spinach and strawberries (along with sliced, toasted almonds if using). Pour dressing over salad, and toss.
Refrigerate 10 to 15 minutes before serving.
