Sun-dried Tomato Basil Bruschetta

A festive red, green and white appetizer/munchie that will make your guests sing, for sure!

Ingredients

1 large baguette, cut into slices
1 jar sun-dried tomatoes, chopped
1 Half red onion, chopped
1/4 Cup(s) herb flavor cream cheese
1 handful fresh basil, chopped
2 Tbsp balsamic vinegar
1/8 Cup(s) extra virgin olive oil

Directions

Preheat oven to 400 degrees.

Baste each slice of baguette lightly with extra virgin olive oil.

Place in the oven for 5 minutes (or until lightly browned).

In medium bowl, combine diced sun-dried tomatoes, red onion, basil and balsamic vinegar (refrigerate until serving).

Over each slice of toasted baguette, spread just tsp of cream cheese.

Top each with the sun-dried tomato, onion, basil and vinegar mixture.

Serve and enjoy!
