Thai Shrimp Ceviche

Shrimp marinated in Thai flavors makes for a cool and refreshing bite, but still has a kick of tangy sweet spice to satisfy your taste buds.

Ingredients

1/2 pound cooked shrimp, shelled, deveined and chopped
2 teaspoons fresh lime juice
1/2 teaspoon sea salt
1 cup jicama, julienned
1/4 cup red bell pepper, julienned
1 tablespoon scallion, thinly sliced
2 teaspoons minced Serrano chili pepper
1/2 cup fresh squeezed grapefruit juice
1/2 cup chopped fresh cilantro
1/2 cup fresh grapefruit segments

Directions

Place you lime juice, salt and cooked shrimp in a large bowl, and allow it to sit for 5 minutes.

Then, add jicama, bell peppers, scallions, Serrano pepper, grapefruit juice and cilantro. Toss your mixture gently, then refrigerate until chilled, or about 1 hour.

When ready to serve, divide the shrimp mixture among 4 plates. Garnish each plate with 2 tablespoons of fresh grapefruit segments and serve.
