Tomato and Buffalo Mozzarella Towers

For an appetizer that's fast, easy and delcious, turn to these towers of cheese and tomato from Catering Pro Andrea Correale.

Ingredients

6 large Red Beef steak tomatoes; sliced  
4 large balls of buffalo mozzarella
3 cup Fresh basil leaves;  
1 teaspoon Sea Salt  
1 teaspoon Black Pepper  
4 cloves garlic chopped
6 tablespoons pine nuts
1 cup Romano cheese (grated)  
2 cups Extra Virgin Olive Oil  
1 round cookie cutter ( same size as tomato slice)
Balsamic Glaze (optional)
Salt and Pepper to taste

Directions

In a food processor bowl or blender, combine basil, salt, pepper, garlic, pine nuts, Romano cheese and olive oil at a high speed until it has a pureed consistency.

Cut Buffalo Mozzarella in 1/4 slices, then cut out a perfect sized circle with the cookie cutter.

Layer the plate with Tomato, then mozzarella smeared with pesto sauce, then repeat until you create a tower. Garnish the top of the tower with fresh basil leaves or some chopped cherry tomatoes with onions tossed in balsamic dressing.

Drizzle some balsamic glaze on the plate for extra flavor (optional). You could also season each tomato slice with salt and pepper to taste as you are stacking them (optional).
