If a big old birthday cake is too much for a casual grill-out, go with these easy tropical layered cookies.
Ingredients
1 1/2 cups ground graham cracker crumbs
1/2 Cup unsalted butter, melted
1 Cup white chocolate chips
1/2 Cup finely chopped dried pineapple
1/2 Cup finely chopped Macadamia nuts
1 Cup sweetened flaked coconut
Directions
Preheat oven to 350 degrees. Butter the bottom and sides of an 8 x 8-inch baking dish. Place crumbs into a mixing bowl and stir in melted buttered until crumbs are thoroughly moistened. Pat crumb mixture into an even layer over bottom of prepared baking dish. Refrigerate for 30 minutes.
Layer white chocolate chips, pineapple, and nuts over crust. Pour sweetened condensed milk over layered ingredients, and sprinkle coconut on top.
Bake for 20 - 30 minutes until edges are lightly browned. Cool thoroughly before cutting into 2-inch squares.
