Don't leave the vegetarians out in the cold! After whipping up this delicious pizza recipe, throw it on the grill to add that authentic BBQ flavor.
Ingredients:
1 package of pre-made pizza dough (alternately, can make dough from scratch with any recipe)
1/2 cup chopped broccolini
1/2 cup chopped firm tofu (optional)
1/4 cup corn
1/2 cup grated fontina cheese
1 to 2 cloves finely chopped garlic
1 sliced tomato
1/4 medium red onion, sliced
3 tablespoons BBQ sauce
1.5 tablespoon Ranch dressing
1 tablespoon olive oil
salt to taste
Directions:
Roll out dough to create round pizza dough base and roll over the edges to create the crust.
Place on a pizza peal that has been dusted with corn meal.
Mix together the Ranch and BBQ sauce, dip the tofu in it for flavor, and save the remaining mixture to brush onto the pizza dough as a base.
Put all of the chopped vegetables, tofu, garlic, and cheese together in one bowl.
Brush the olive oil over the crust and pizza dough.
Place pizza crust on top of the BBQ over medium-high heat and grill for approximately 2-3 minutes until you can easily flip the crust over to brown the other side.
Once the pizza has been flipped, brush on the BBQ sauce and ranch mixture as a base, then add the bowl of vegetables, cheese, tofu and garlic.
Continue grilling for a few more minutes, until everything is thoroughly heated and the veggies soften. Optional: Add a few dashes of red pepper flakes for added zing.
