This yummy dish will certainly be enjoyed by all guests - not just vegetarians! Even self proclaimed carnivores will love the rich flavor.
4 red peppers, washed, hollowed and halved
2 cups cooked short grain brown rice
1/2 of a medium-sized white onion, sliced and sauteed
1/2 cup of canned, cooked and diced tomatoes
3 tablespoons olive oil
salt and pepper to taste
In a large bowl, mix together the sauteed sliced onions, the brown rice, the cooked tomatoes, 1.5 tablespoons of olive oil and a few dashes of salt and pepper.
Brush the outside of the bell peppers with the remaining olive oil.
Stuff the mixture into each cleaned and hollowed bell pepper half.
Put the stuffed peppers directly onto the BBQ over a medium-low heat and allow to grill for 2-3 minutes before turning and grilling the other side another few minutes.
