Whether you grew the veggies in your very own garden or purchased them at the local farm market, home-made veggies chips are tasty and environmentally friendly. Dip them in organic guacamole for Earth Day chips and dip you can be proud to serve.
3 cup(s) 1/4 inch thick slices white potato
3 cup(s) 1/4 inch thick slices sweet potato
3 cup(s) 1/4 inch thick carrot sticks
2 whole avacados
1 half onion
1 whole tomato (remove seeds)
2 tbsp cilantro (finely chopped)
2 tbsp extra virgin olive oil
1/2 tsp garlic salt
1 tsp sea salt
2 pinch black pepper
To Make Veggie Chips:
Preheat the oven to 350 degrees.
Spray a cookie sheet with cooking spray. Spread the white and sweet potatoes, along with the carrots sticks on the cookie sheet.
In a medium bowl, mix together the olive oil, 1/2 tsp sea salt, garlic salt and black pepper.
Using a pastry brush, brush the mixture onto the sliced veggies. Bake veggies for 20-25 minutes or until crisp. Allow to cool.
To Make the Guacamole:
Cut the avocados in half and remove the pit.
Scoop avocado into a medium bowl and mash with a fork.
Add chopped onion, tomato and cilantro. Mix well.
Season with the remaining sea salt.
